During COP26 in October 2021, CEO Martin Williams unveiled plans to open “Scotland’s most sustainable steak restaurant”, situated just a stone’s throw from Glasgow’s Central Station. A timely addition to Glasgow’s gastronomic fare, the restaurant will follow in the footsteps of Gaucho Charlotte Street, becoming the restaurant group’s second exclusively carbon-neutral beef venue, embodying Martin’s vision for the way restaurants should operate responsibly both socially and environmentally.
After launching in Edinburgh, there has long been an appetite for Gaucho’s offering in Scotland. Furthermore, with Glasgow having recently hosted COP26, the city is the perfect location for Gaucho’s next launch, in line with Williams’ ambitious impact and sustainability mission. The Gaucho group aims to become a net zero carbon business by 2030 and is working with several industry bodies to achieve this, as well as spearheading the Sustainable Steak Movement – launched in Glasgow in autumn 2021. Williams launched the movement to accelerate the transition towards more planet friendly beef production. Participating restaurants must offer an exclusively carbon-neutral beef menu by 2025, and by 2030 members must run ‘Net Zero’ venues. The restaurant will boast sustainable wine offerings, zero-food to landfill and a 100% renewable electricity policy, as well as working with farming partners to go further than offsetting carbon emissions from production but reduce the carbon footprint at source. Gaucho also partners with charity Not For Sale - which creates long-term, sustainable, scalable solutions to break the cycle of modern day slavery - on their reforestation projects in the Amazon which in turn offsets carbon emissions.
The 120-cover venue will showcase contemporary design reflecting a more modern Argentina, with artwork paying homage to the modern Gaucho. Gaucho classics including the ‘Never Ending Roast’, accompanied by live music from local artists every Sunday, as well as special lunch menu will be on offer, along with the option to enjoy Gaucho at Home with Meat and Bun via Deliveroo. The à la carte menu, overseen by Culinary Director Mike Reid, is strongly influenced by modern Argentina. Starters include Shrimp Ceviche and Empanadas, followed by an unrivalled selection of 100% carbon-neutral steaks from Black Angus cattle, bred in Argentina, grazing on 17 different types of grass from the La Pampa provinces. When ordering any steak, guests will also have the option to ‘top with a tree’ for £2, which will go towards the planting of a sapling tree in south America, thereby contributing to Gaucho’s work in carbon offsetting. Alongside the steaks, further main courses include the likes of vegan Gnocchi with pumpkin and Swordfish Causita, whilst desserts feature Gaucho’s take on the traditional Argentine Alfajores. Gaucho is also dedicated the support of local suppliers from Scotland. As well as reducing food miles, and therefore the carbon footprint of the produce, it will celebrate local causes within the community.
CEO Martin Williams said of Gaucho Glasgow: ‘Glasgow is the perfect location for our first new Gaucho restaurant since 2016 for many reasons, none less than it being the home city of COP26.’
